Yummy Seasonal Side Dish

 Yummy Butternut Squash







Butternut squash is similar in taste to pumpkin with its slightly sweet and nutty taste. This squash is easily prepared and tastes great. The riper the squash the darker orange the flesh will be. 

Ingredients:
1 large butternut squash
extra virgin olive oil
sea salt
1. Preheat the oven to 400 degrees
2. Peel the squash 
3. Cut the squash in half lengthwise, scoop out and discard the seeds and pulp.
4. Dice the squash into evenly sized pieces
5. Lightly coat a baking sheet with extra virgin olive oil
6. Spread out the diced squash evenly and sprinkle with extra virgin olive oil and a pinch of    sea salt
7. Cook at 400 degrees for 35 minutes, stir halfway through.
8. Enjoy with a lean protein and other steamed veggies!
